The idea of creating the Chatzivaritis Estate emerged in the early 1980s, when Vangelis Chatzivaritis and Olga Iakovidou were gathering their friends each year in Goumenissa to bottle the wine of the year. The endless discussions at those meetings, as well as their love for good wine, led Vangelis and Olga to the creation of a Chatzivaritis vineyard and winery. 
They started at the beginning of the 1990s by purchasing the first farm plot in the vicinity of Bidabla, Goumenissa’s winegrowing district, and in 1994 they planted the first vineyard of 5 hectares, under the supervision, and with the active participation, of Doros Vasiliades and his two sons, Victor and Costas. In 2000 they purchased another 5 hectare plot in the Vakoufia district, near the village of Filyria, and one year later they planted the vines, only with the varieties Xinomauro and Negoska. It was on this plot that the winery was built (construction was completed by 2007).At the same time an experimental vineyard of 0,8 hectares was started in order to test the acclimation of new varieties to the area's conditions.
